Vegan Veggie Pasta Salad

Last night I decided to make a pasta salad simply out of what was in the fridge. This wasn’t a dish I had planned out & so I didn’t buy any one item specifically for it. But, luckily I had lots of goodness in the fridge to make it fantastic!

What I used:

  • 1 box of linguine
  • 16 ounces of diced tomatoes
  • 1 small can of black olives (only olives I had)
  • chickpeas
  • 1 onion
  • cucumber
  • carrots
  • a salad dressing
What I did:
  • I simply cut up the veggies that need cut & put them in the dish
  • Added in the canned veggies 
  • Added in the linguine
  • Added in the salad dressing
Pasta salads were always a favorite of mine to make or eat in the summer. I remember being a young girl and being so excited when my mom made pasta salads for lunch parties we would have in the summers. I’m sure I’ll be making many more pasta salads this summer. But, I thought I would share the one I made spur of the moment!
